Le <b>pain<\/b>, \u00e9l\u00e9ment central de la table, est encore pr\u00e9par\u00e9 selon d&rsquo;anciennes recettes : des focaccias moelleuses aux typiques <b>galettes<\/b>, cuites au four \u00e0 bois et souvent consomm\u00e9es avec des fromages frais et affin\u00e9s. <\/p><p class=\"p1\">Le protagoniste incontest\u00e9 est le <b>pecorino sarde<\/b>, produit avec du lait de brebis local, mais aussi la <b>ricotta<\/b>, souvent utilis\u00e9e pour les desserts et les raviolis. Le <b>miel de maquis m\u00e9diterran\u00e9en<\/b>, obtenu \u00e0 partir d&rsquo;herbes sauvages comme le ciste, le romarin et l&rsquo;arbousier, repr\u00e9sente l&rsquo;une des excellences du territoire, et se marie parfaitement avec les fromages. <\/p><p class=\"p1\">Pendant les f\u00eates et les \u00e9v\u00e9nements saisonniers, comme la <b>F\u00eate du Vin<\/b>, les saveurs locales double lien avec la mer et la campagne. Les <b>plats de poisson frais<\/b> \u2013 comme la soupe de crustac\u00e9s ou les grillades mixtes \u2013 c\u00f4toient les pr\u00e9parations traditionnelles terrestres : <b>charcuteries locales<\/b>, soupes de l\u00e9gumes, l\u00e9gumes de saison, et les incontournables <b>seadas<\/b>, desserts frits farcis au fromage et servis avec du miel chaud. <\/p><p class=\"p1\">Ici, comme dans de nombreuses r\u00e9gions de la Gallura, on produit encore l&rsquo;<b>huile d&rsquo;olive extra vierge<\/b> artisanale, id\u00e9ale pour assaisonner le pain et les l\u00e9gumes crus. Le <b>bl\u00e9<\/b> est la base de nombreuses pr\u00e9parations : des <b>zuppette galluresi<\/b>, une sorte de lasagne rustique avec du pain rassis, du bouillon et du fromage, \u00e0 la <b>mazza frissa<\/b>, une cr\u00e8me obtenue \u00e0 partir de semoule et de cr\u00e8me de lait. <\/p><p class=\"p1\">Au <b>MEOC \u2013 Mus\u00e9e Ethnographique Olivia Cannas<\/b>, il est possible de d\u00e9couvrir les anciens outils pour la panification et la transformation du lait. En particulier, un espace est d\u00e9di\u00e9 \u00e0 la cuisine traditionnelle, o\u00f9 l&rsquo;on retrouve les objets du quotidien : le m\u00e9tier \u00e0 tisser, les p\u00e9trins, les r\u00e2pes, la vaisselle en cuivre.
