Mais aussi herbes sauvages, consomm\u00e9es cuites ou crues, et eau de source.  Le pain \u00e9tait pr\u00e9par\u00e9 \u00e0 la maison avec des farines de bl\u00e9 tendre, tricu cossu et de bl\u00e9 dur, tricu saldu. <\/p><p>Souvent cultiv\u00e9s dans de petites parcelles, les grains de bl\u00e9 \u00e9taient moulus dans les moulins du village ou dans les moulins \u00e0 eau. Les femmes s&rsquo;occupaient de la panification et les boulang\u00e8res cuisaient dans les fours tenus en m\u00e9tayage avec le propri\u00e9taire. Les vicissitudes de la nourriture s&rsquo;entrem\u00ealaient donc \u00e0 celles de la vie sociale des villages dans un rappel continu de significations.   Le fromage faisait \u00e9galement partie du quotidien et l\u00e0 aussi, c&rsquo;\u00e9taient les femmes qui s&rsquo;occupaient de sa production. <\/p><p>Il n&rsquo;\u00e9tait pas rare que les hommes, en menant le b\u00e9tail au p\u00e2turage, trouvent les ruches, et alors l&rsquo;essaim \u00e9tait transf\u00e9r\u00e9 dans la ruche en li\u00e8ge qui conservait cette substance pr\u00e9cieuse consomm\u00e9e ensuite avec la ricotta fra\u00eeche. Le vin faisait partie des cultures traditionnelles qui, avec les l\u00e9gumes de saison, les l\u00e9gumineuses, les arbres fruitiers et la production d&rsquo;huiles pr\u00e9cieuses, comme l&rsquo;huile de lentisque, arbuste \u00e0 feuilles persistantes, utilis\u00e9e pour frire les beignets, ne pouvaient manquer sur la table des Gallur\u00e9siens. <\/p><p>L&rsquo;alimentation variait selon les saisons et les occasions, chaque moment de l&rsquo;ann\u00e9e avait sa propre saveur et son propre savoir. L&rsquo;huile de lentisque venait du maquis de lentisque et on allait la cueillir. Quand l&rsquo;huile de lentisque avait les petites baies (drupes), bref, on allait les cueillir. On apportait un panier, on l&rsquo;attachait au cou et puis avec les mains on cueillait, et ces petites baies tombaient \u00e0 l&rsquo;int\u00e9rieur de ceux-ci (paniers).   <br>Quand ils en avaient fait assez, ils faisaient bouillir ce fruit, ils le mettaient dans un petit sac et puis ils le pilaient, avec une sorte de masse, de b\u00e2ton, disaient-ils, un gros b\u00e2ton, lourd, puis quand ils l&rsquo;avaient pil\u00e9 et que tout le jus en \u00e9tait sorti, ils le faisaient bouillir et quand ils le faisaient bouillir, l&rsquo;huile remontait \u00e0 la surface, ils prenaient cette huile, la s\u00e9paraient de l&rsquo;autre liquide, la faisaient bouillir \u00e0 nouveau et elle devenait belle et brillante.<br>Et ainsi ils avaient obtenu l&rsquo;huile de lentisque qui \u00e9tait po\u00eale, si possible en terre cuite, qu&rsquo;on appelait la soupi\u00e8re, on mettait un peu de sel, de la farine et on laissait comme \u00e7a un peu pour voir l&rsquo;huile de fromage qui servait \u00e0 cuisiner et \u00e0 frire.<br>La sauce, ils la faisaient avec l&rsquo;huile de fromage et ils faisaient aussi frire les pommes de terre (avec l&rsquo;huile de fromage).<br>Cr\u00e8me de lait, on la mettait sur le feu dans une po\u00eale, si possible en terre cuite, qu&rsquo;on appelait la soupi\u00e8re, on mettait un peu de sel, de la farine et on laissait cuire un peu pour que l&rsquo;huile sorte de la cr\u00e8me, appel\u00e9e huile de fromage, qui \u00e9tait aussi utilis\u00e9e pour frire (les pommes de terre) et pour faire la sauce gallurienne<\/h4>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-7e71bd8 elementor-widget elementor-widget-text-editor\" data-id=\"7e71bd8\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>La soupe gallurienne est un plat typique de la Gallura \u00e0 base de pain sec (spianata ou pain de bl\u00e9 dur coup\u00e9 en tranches), de bouillon de viande, de fromage et de \u00ab\u00a0ghisatu\u00a0\u00bb, une sorte de sauce de viande, type rago\u00fbt qui accompagne la soupe. Le bouillon est fait avec des os et des morceaux de viande de porc, de mouton ou de veau, des l\u00e9gumes, du persil, les tiges, les feuilles sont hach\u00e9es pour \u00eatre m\u00e9lang\u00e9es au fromage r\u00e2p\u00e9 qui sera utilis\u00e9 pour assaisonner les couches de pain, avec la peretta, panedda ou cungedda, fromage frais de vache, des \u00e9pices (poivre noir, piment, menthe, suk, &#8230;), de la sauce tomate, des tomates pel\u00e9es ou du concentr\u00e9. &nbsp;<\/p>\n<p>Le bouillon est pr\u00e9par\u00e9 dans de grandes marmites, \u00ab\u00a0caldari\u00a0\u00bb, ainsi que \u00ab\u00a0lu ghisatu\u00a0\u00bb. On utilise ensuite l&rsquo;\u00e9cumoire pour \u00e9liminer la partie la plus grasse du bouillon. Les casseroles sont graiss\u00e9es avec du lard, de l&rsquo;huile d&rsquo;olive ou du beurre, puis on proc\u00e8de \u00e0 la disposition du pain en couches, sans presser les feuilles ou les tranches de pain entre elles, dans les deux premi\u00e8res couches on ne met pas d&rsquo;assaisonnement, on continue ensuite avec du fromage r\u00e2p\u00e9 et frais couche apr\u00e8s couche jusqu&rsquo;\u00e0 remplir \u00ab\u00a0li caldari\u00a0\u00bb, une fois la base pr\u00eate, on verse le bouillon dans la casserole avec le pain, en utilisant une brochette en bois pour permettre au bouillon de p\u00e9n\u00e9trer entre les couches de pain, en per\u00e7ant et en soulevant les couches de pain, au fur et \u00e0 mesure que le bouillon est ajout\u00e9, la casserole est ensuite plac\u00e9e sur la flamme et tourn\u00e9e dans le sens des aiguilles d&rsquo;une montre par le cuisinier \u00ab\u00a0lu cuzineri\u00a0\u00bb, avec des mouvements rapides.  &nbsp;<\/p><p>Autrefois, on utilisait un couvercle et on disposait \u00e9galement des braises sur celui-ci, plus r\u00e9cemment la soupe est \u00e9galement cuisin\u00e9e au four, sans ghisatu, et une cro\u00fbte de fromage se forme alors Neige\u00a0\u00bb, parfois appel\u00e9es aussi \u00ab\u00a0Cr\u00e8me Gallurienne\u00a0\u00bb sont un dessert exclusif de la Gallura, encore aujourd&rsquo;hui presque inconnu dans d&rsquo;autres r\u00e9gions de la Sardaigne. Il s&rsquo;agit presque certainement d&rsquo;une recette import\u00e9e de France, en passant par la Corse voisine, o\u00f9 elles s&rsquo;appellent \u00ab\u00a0\u00celes flottantes\u00a0\u00bb, suite aux \u00e9changes intervenus entre les deux \u00eeles \u00e0 partir de 1800. Elles se d\u00e9gustent \u00e0 la perfection accompagn\u00e9es de Moscato de Tempio.  <\/p><p><strong>Ingr\u00e9dients<\/strong><br>\u0153ufs, lait, farine, sucre, sucre caram\u00e9lis\u00e9, zeste de citron<\/p><p><strong>Pr\u00e9paration<\/strong><br>Le dessert se pr\u00e9pare en trois temps diff\u00e9rents.<\/p><ol><li>Tout d&rsquo;abord, il faut pr\u00e9parer les boules de neige : montez en neige les blancs de 6 \u0153ufs, le blanc d&rsquo;\u0153uf est appel\u00e9 \u00ab\u00a0ciara di l&rsquo;oa\u00a0\u00bb et mettez de c\u00f4t\u00e9 les jaunes, aidez-vous d&rsquo;une pinc\u00e9e de sel et d&rsquo;un batteur \u00e9lectrique. Ils doivent \u00eatre tr\u00e8s mousseux. Mettez dans une casserole large trois doigts de lait et faites ti\u00e9dir. Remplissez une cuill\u00e8re de blanc mont\u00e9 jusqu&rsquo;\u00e0 cr\u00e9er une sorte de boule que vous d\u00e9poserez dans le lait, en la retournant jusqu&rsquo;\u00e0 ce qu&rsquo;elle se compacte. Retirez la boule du lait et met    <\/li><li>Apr\u00e8s avoir rempli le plat avec toutes les boules, pr\u00e9parez une cr\u00e8me p\u00e2tissi\u00e8re classique en utilisant les jaunes des 6 \u0153ufs.
